Sparkling Fruit Mold
Makes 12 Servings
1-1/2 cups boiling water
1 pkg. (8-serving size) Mandarin Orange Flavor Sugar Free Jello
2 cups cold diet ginger ale
1/2 cup green grape halves
1/2 cup red grape halves
1 can (11 oz.) mandarin orange segments, drained
Stir boiling water into gelatin in large bowl at least 2 minutes until
completely dissolved. Refrigerate 15 minutes. Gently stir in ginger ale.
Refrigerate about 30 minutes or until slightly thickened (consistency of
unbeaten egg whites). Gently stir for 15 seconds. Stir in grapes and oranges.
Pour into 6-cup mold sprayed with no stick cooking spray. Cover.
