Beets and Mandarin Oranges
one 15 ounce can sliced beets
1-1/2 teaspoons green onions, thinly sliced
2 tablespoons red wine vinegar
1 tablespoon water
1-3/4 teaspoons Equal® for Recipes or 6 packets Equal® sweetener or 1/4 cup Equal® Spoonful™
1 /11 ounce can mandarin oranges, drained
4 tablespoons almonds, sliced or slivered (optional

Drain and rinse beets. Combine beets, green onions, red wine vinegar, water and Equal® in a bowl. Cover and refrigerate for at least 4 hours in the refrigerator. Stir halfway through.
Just before serving, drain mandarin oranges and stir into beet mixture
Toast almonds in small skillet over medium heat. Stir constantly until browned. Garnish each serving with 1 tablespoon almonds, if desired.
