Cornbread Taco
1 lb. ground beef
1 small onion
2 Tbs taco seasoning
1/2 tsp salt
1/4 tsp black pepper
2 cups shredded cheddar cheese
Preheat oven to 400 degrees. Brown ground beef and onion. Stir in taco
seasoning, salt, and pepper. Set aside.
1 1/2 cups War Eagle Cornbread Mix
1 egg
2 Tbs sugar
1 1/2 cups water
Stir cornbread mix, sugar, egg, and water together. Spread in a 12-inch pizza
pan or an 11x14 inch baking pan. Batter should be be about 1 1/2 inch thick.
Bake for 8-10 minutes; remove from oven.
Spread with 1 cup of cheese, ground beef mixture, then 2nd cup cheese, in that
order. Bake for 5-10 minutes until cheese melts.
Serve with your favorite salsa and shredded lettuce.
