Shaker Pie Dough
1 c. flour
1/4 tsp. salt
1/3 c. + 2/3 tbsp. shortening
Cold water

Mix flour and salt together; then cut in shortening until mixture is in small crumbs. Sprinkle cold water over mixture and stir until mixture forms a ball. With floured hands remove dough from bowl and roll out on a floured surface with rolling pin. this is a very tender and flaky crust. Handle it as little as possible as handling the dough will toughen it.
