Oatmeal Pie
1 1/2 c. milk
3 eggs, lightly beaten
3 tbsp. margarine, melted
2/3 c. rolled oats
1 1/3 c. dark brown sugar
2/3 c. flaked coconut
1 (9 or 10 inch) pie shell, unbaked
Preheat oven to 425 degrees. Combine milk, eggs, butter, oats, sugar and coconut
in a large bowl. Mix thoroughly with a wire whisk. Pour into pie shell and
sprinkle with additional coconut. Bake for 10 minutes. Reduce heat to 350
degrees and bake for an additional 30 minutes or until a knife inserted in the
center comes out clean.
