Molasses-Rum Barbecue Sauce
2 T vegetable oil
1 large yellow onion, diced medium
2 T minced ginger
2 T minced garlic
1 C rum
1/2 C red wine vinegar
1 C ketchup
1/2 C molasses
1/4 C lightly packed brown sugar
1 T ground allspice
pinch ground mace
salt and pepper to taste
In saucepan over medium heat, heat oil and saute onions until transparent. Add
ginger and garlic and saute, stirring, for 1 minute. Add the rum, vinegar,
ketchup, molasses, sugar, allspice, and mace. Bring just to a boil. Reduce heat
to low and simmer for 20 minutes. Add salt and pepper to taste.
