Million Dollar Meat Balls
1 lb. ground beef
2 eggs, slightly beaten
1/2 c. soft breadcrumbs
1/4 c. grated Parmesan cheese
1 (10 oz.) pkg. frozen chopped
spinach, thawed and drained
1 tsp. salt
3 Tbsp. hot salad oil
1 1/4 c. cold water
2 Tbsp. lemon juice
1 (3/4 oz.) pkg. brown gravy mix
hot cooked noodles
Combine beef, eggs, breadcrumbs, cheese, spinach and salt; mix well. Shape into
1 1/2 inch balls. Brown well in hot oil; drain excess fat. Stir in water, lemon
juice and gravy mix, blending well. Simmer, uncovered, 15 minutes. Serve over
noodles, if desired. Yields 4 servings.
