Million Dollar Zucchini Quiche
1 pkg. Pillsbury crescent dinner rolls
4 c. thinly sliced zucchini
1 c. chopped onion
1/2 c. margarine
1/2 c. fresh chopped parsley or 2 Tbsp. dried
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. sweet basil
1/4 tsp. oregano
2 eggs
8 oz. shredded Mozzarella cheese
Crust: Spread crescent rolls in quiche pan until bottom is covered completely.
Poke several holes. Bake at 450 degrees for 7 minutes; cool completely. Filling:
Saute zucchini and onions in margarine 10 minutes until filling looks
transparent. Add parsley, salt, garlic, basil and oregano. Beat eggs and
Mozzarella and pour into filling. Bake in a prepared pie shell 20 minutes at 375
degrees.
*Diabetics can leave the crust out completely, instead lining the pan with foil.
