Jamaican Jerk Chicken And Salsa
4 chicken breasts with skin
2 tablespoons hot pepper sauce
1 teaspoon seasoned salt
½ teaspoon cinnamon
½ teaspoon allspice
Cooked white rice
PAPAYA SALSA
1 ½ cup ripe papaya, diced
¼ cup red onion, minced
2 tablespoons sugar
1 4-ounce jar diced pimento, drained
2 tablespoons hot pepper jelly
2 tablespoons fresh cilantro

Instructions: Heat oven to 400 degrees. Coat both sides of chicken with hot pepper sauce and place in shallow baking pan.
Combine salt and spices; sprinkle over coated chicken. Bake in preheated oven for about 45 minutes, basting twice with pan juices.
Mix papaya, onion, sugar, pimento, pepper jelly and cilantro well. Arrange chicken on bed of rice and spoon papaya salsa over chicken.
