Gomes de sa bacalhau
2 boxes salt cod
6 med potatoes, parboiled and sliced
1 cup olive oil
6 med onions, sliced
4 cloves garlic, minced
1/2 ts thyme
1/2 c parsley, chopped
1 bay leaf
1/2 ts cumin seed
1/2 ts pepper
1 c dry white wine
1 c tomato juice
2 ts Worcestershire sauce
1/2 ts tabasco
1/2 c bread crumbs
1/2 c parmesan cheese
Prepare salt cod (desalt). Cut into rough 2 in pieces. Parboil sliced potatoes.
Heat oil, saute onions and garlic 'til soft. Add thyme, parsley, bay leaf,
cumin, and black pepper. Stir well, add wine, juice, wooster, tabasco, simmer 5
minutes. Add potatoes and fish, cook until potatoes are tender, about 12-15
minutes. Put in casserole, for flavor, sprinkle w/bread crumbs and cheese. Place
in 300 oven 10 minutes or until top is brown.
