Purusalda Salt Cod Stew
Serves 4 to 6
200g bacalo/salt cod (unsoaked weight)
0.75 lb starchy potatoes
2 to 3 leeks
2 tbsp olive oil
salt and black pepper
Soak the salt cod over night, changing the water frequently. Add all the
ingredients in a large saucepan. Pour on just enough water to cover and boil for
20 to 25 minutes, until potatoes are cooked and starting to disintegrate. Adjust
seasoning to taste.
