Ginger Raisin Muffins
Ingredients :
3/4 cup margarine
1 1/2 tsp. salt
1 cup cooking molasses
3 cups white flour
3 cups whole wheat flour
3 T. baking powder
1 1/2 tsp. ginger
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 cup raisins
2 1/4 cups milk
2 beaten eggs
Instructions : Cream margarine, salt and molasses in large mixing bowl. In
another bowl, mix white flour, whole wheat flour, baking powder, ginger,
cinnamon, nutmeg, and raisins. (If you like your muffins sweet, add some sugar.)
Mix milk and eggs. Add dry ingredients to creamed mixture alternately with
milk/egg mixture. Place in well-greased muffin tins. Bake in 400 degree oven for
20 minutes.
