Frozen Cranberry Loaf
4 c. sugar
8c. cranberries (chopped coarsely)
1/2 c. chopped walnuts
1 (8 oz) can of crushed pineapple, drained
2 (12 oz) cartons frozen whipped topping, thawed
2 (8 oz) packages of cream cheese, softened
In a large mixing bowl, beat cream cheese, whipped topping and sugar at low
speed until thoroughly mixed. Fold in remaining ingredients and stir to
distribute evenly. Pour mixture into 3 loaf pans and freeze. To serve, unmold on
plate and garnish with lettuce and cranberries.
