Flambeed Chicken Margarita
2 tb Butter; divided
4 Chicken breasts; with bone .. skinned
1 tb Flour
1/2 c Chicken broth
1/4 ts Pepper
2 tb Orange liqueur
1 1/2 tb Lime juice
1 tb Tequila
1. Brown chicken breasts 5 minutes on each side in 1 tablespoon butter; remove
and keep warm. Wipe out pan.
2. Melt remaining butter; whisk in flour. Cook, stirring, 1 minute. Add chicken
broth and pepper, whisking constantly. Bring to a boil and cook, stirring, until
thickened, about 1 1/2 minutes. Stir in liqueur and lime juice; return chicken
to skillet.
3. Pour tequila into one side of skillet; ignite using a long match. Let flames
die down before serving.
