Cranberry-Maple Sauce
Here's an early American recipe adapted for modern day.
1/2 cup packed brown sugar
1/2 cup maple syrup
1/2 cup water
2 cups fresh cranberries (8 ounces)
1 tablespoon shredded orange peel or lemon peel
In saucepan mix sugar, syrup and water. Bring to boil, stirring to dissolve
sugar. Reduce heat. Simmer, uncovered for 5 minutes, stirring occasionally. Add
cranberries. Return to boiling; reduce heat. Simmer for 3 to 4 minutes or until
cranberry skins pop, stirring occasionally. Remove from heat. Stir in orange
peel. Serve warm or chilled with roast poultry, pork or ham.
Make 1-3/4 cups.
