Cornish Hens Tarragon
4 Cornish hens; split
1 1/2 ts Tarragon
-MARINADE-
1/4 c Olive oil
1/4 c Lemon juice
1/4 c Soy sauce
1/4 c Dry vermouth or chicken .. broth
2 Cloves garlic; pressed
1 1/2 ts Salt
1/2 ts Coarsely ground pepper
1 1/2 ts Tarragon
1. Combine marinade ingredients. Marinate hens, covered in the refrigerator, 8
hours. Drain and discard marinade.
2. Preheat oven to 350°. Lightly oil broiler rack.
3. Arrange hens on rack; sprinkle with remaining tarragon. Bake until done,
about an hour.
