Dove, Quail or Wood Duck
Salt

Dove
1 tb Butter per dove (up to 2)
Wine; to taste
Preheat oven to 350°.
Figure 2 or 3 dove per person.
Dredge dove in flour seasoned with salt & pepper. Saute in cast iron skillet in
butter about 15 minutes. Transfer to casserole dish. Pour wine into butter and
heat through. Pour over dove to a depth of about 1/4". Bake 30 minutes. If it
appears to be drying out, partially cover with foil.
Makes any number of servings.
