Corn Bread
1/4 cup margarine, Country Crock Light
1 cup yellow cornmeal
1 cup flour, all-purpose
2 tablespoons sugar -- optional
1 tablespoon baking soda
1/2 teaspoon salt -- optional
1 cup milk, 2% lowfat
1 egg -- beaten
Heat oven to 425 degrees. Melt margarine in a 9"x9" baking pan, coat bottom and
sides, reserve rest for mix. Combine dry ingredients. Add milk and egg until
blended. Add melted margarine and mix well. Bake 20 to 25 minutes or until
wooden toothpick inserted in center comes out clean. Cut into 9 equal pieces.
