City of D'Lights Pumpkin Coffee Cake Recipe
Serves/Makes: 4 loaves
Ingredients:
5 cups flour
1 1/4 cup sugar
5 tablespoons baking powder
1 teaspoon baking soda
2 teaspoons salt
2 teaspoons pumpkin pie spice
7 eggs
3 cups pumpkin puree
1 cup canola oil
# **Crumb topping:***
2 sticks butter, softened
1/3 cup sugar
2/3 cup brown sugar, packed
Pinch salt
1 teaspoon cinnamon
4 cups flour

Directions:
Preheat oven to 375F. Mix together the dry ingredients, then mix together the wet ingredients, then combine the two mixtures. Sprinkle with crumb topping if using. Pour into greased loaf pans. Bake for 50 minutes. Check for doneness with a dry knife.
Crumb topping:
Note: If making muffins, chef DaSilva recommends testing them after 20 minutes with a dry knife. If wet batter remains on the knife, continue to bake in 5-minute increments.
