Uniq Fruit and Fennel Salad
Thin slices of fennel combine with the citrus flavor of Uniq fruit in a tangy
vinaigrette for a refreshing fall salad.
40 spinach leaves, cleaned and stemmed
4 Uniq® fruit, peeled and sectioned
1 fennel bulb, cleaned, quartered and thinly sliced
2 ripe medium tomatoes, cored, seeded, and cubed
Arrange 10 washed and patted dry spinach leaves on 4 individual salad plates.
Place Uniq sections in a pinwheel on the spinach leaves. Sprinkle thinly sliced
fennel in center of salad.
Place 1 tablespoon cubed tomato between each Uniq fruit section. Dress with Lime
Vinaigrette. Serves 4.
