Tamaya Blue Corn Muffins
1 ½ cup unbleached white flour
1 cup Tamaya Roasted Blue Cornmeal
3 tsp. baking powder
½ tsp. salt
1 tsp. sweetener
1 ½ cups milk
2 eggs well beaten
1/3 cup cooking oil

Shift flour, Cornmeal, baking powder, sugar and salt together. Add milk, oil and well beaten eggs. Mix until smooth. Fill paper muffin cups ¾ full. Bake at 400 degrees for 20 to 25 minutes.
