Lime and Lychee Ice
Ingredients
1 pound fresh lychees, peeled and seeded juice of one lime
3/4 cup powdered sugar

Preparation
Place the lychee flesh in blender with lime juice and powdered sugar. Process until smooth. Pour into a container suitable for the freezer, freeze until slushy, then beat well. Repeat this twice. Freeze for several hours until solid. Serve in small scoops with slices of fresh mango or other tropical fruit, such as papaya or carambola.
