Kumquat Chicken Oriental
2 tbsp. oil
1 pound chicken breasts (2 large halves)
1/2 cup celery, diagonally cut
1/2 cup green onion, sliced into 1 inch diagonal pieces
1/2 tsp. dry ginger
1/2 cup kumquats, sliced and seeded
1 cup loosely packed snow pea pods
1/2 cup chicken broth or 1 bouillon cube and 1/2 cup water
2 tbsp. cornstarch mixed with 1/2 cup water
1 tbsp. orange juice concentrate
1/2 cup toasted whole almonds
2-3 cups cooked wild rice

Heat oil in skillet. Add chicken and cook until chicken is almost done. Add celery, onion, ginger, kumquats, snow pea pods, chicken broth, and orange juice concentrate. Stir and cook 1 to 2 minutes until vegetables look bright green. Add cornstarch and water mixture, stirring constantly until juices are clear. Top with almonds and serve on a bed of wild rice.
