Cranberry Biscuit Mix Bread
2 cups War Eagle Biscuit Mix
2 tsp. baking powder
¾ cup brown sugar, packed
1 tsp. grated orange peel
1 ½ cups orange juice
1 Tbsp. vegetable oil
1 egg, beaten
½ cup chopped pecans or your favorite nuts
1 cup fresh cranberries, cut in halves
In small bowl, soak cranberries in sugar and orange juice. In large bowl, stir
together Biscuit Mix, baking powder, orange peel, and nuts.
Stir egg and oil into cranberry mixture; combine with dry ingredients. Fold into
a greased large loaf pan. Bake in a preheated 325 degree oven for 50 minutes or
until inserted toothpick comes out clean. Remove from loaf pan; cool on wire
rack.
