Blue Corn Blinis
Makes about 90 little pancakes
Ingredients
1/2 cup plus 1 Tbl unbleached Arrowhead Mills all purpose flour
1/2 cup plus 1 Tbl blue cornmeal
1 package active dry yeast
2 egg yolks
1 1/2 cups non-fat milk warmed
4 egg whites, beaten stiff, do not over beat
2 Tablespoons corn oil margarine, melted
Directions Combine the flour, cornmeal and yeast in a bowl and mix well. Add the
egg yolks and milk and again mix well. Fold in the egg whites and melted
margarine. To cook, heat a heavy skillet over a medium heat. Oil the surface and
wipe dry. For each blini, spoon 1 Tbl of batter onto the hot surface and cook
until bubbles form and break. Turn over and lightly brown on the other side.
Serve the warm blinis with a dollop of sour cream and caviar or smoked salmon
and garnish with a sprig of fresh Dill.
