Wild Rice Salad
1 c. wild rice
1/4 c. chopped parsley
1/2 c. chopped celery
1/2 c. chopped green pepper
1/4 c. chopped green onions
1/2 c. sweetened dried cranberries

Cook wild rice in 4 cups water until almost done, about 45 minutes. Drain well; cool. Add remaining salad ingredients.
Dressing: 1/2 c. cranberry juice, 1 tsp basil, 1/2 c. white vinegar, 5 tbsp. olive oil, sugar & salt to taste. Combine dressing ingredients, add to salad, mix together. Serves 10-12.
