Top Hat Casserole
2 tablespoons butter
1/2 cup milk
1/2 teaspoon salt
1 teaspoon nutmeg
6 medium-size sweet potatoes, cooked and mashed, or 1 pound can sweet potatoes,
mashed
13 1/2-ounce can pineapple tidbits, drained
2 cups miniature marshmallows
Add butter, milk, salt and nutmeg to mashed sweet potatoes. Beat until smooth,
light and fluffy. Fold in pineapple. Spoon into greased 9-inch square baking
dish. Cover with marshmallows Bake at 350 degrees for 20 minutes, until heated
through and marshmallows are lightly browned.
