Squash and Onion Southern Style
Ingredients :
8-10 small yellow squash, cut in bite-sized pieces
1 medium onion, chopped
1 stick of butter or margarine
salt
pepper
Instructions :
Melt butter in iron skillet. Add onion and cook at medium heat just until
turning transparent. Add squash and salt and pepper to your taste. Stir just
until everything is coated in butter. Cover, reduce heat to simmer for 10 - 15
minutes or until tender. Remove cover and increase heat slightly to reduce
liquid.
Note: This is an old favorite southern recipe that serves nicely with chicken or
beef.
