Snackwells Chocolate Chip Cookies Recipe
Serves/Makes: 12 dozen
Ingredients:
1 egg white
1/4 cup sugar
1 tablespoon brown sugar
1 tablespoon corn syrup
1 tablespoon shortening
1 1/2 tablespoon egg substitute
3/4 cup all-purpose flour
1/4 teaspoon salt, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 pinch additional salt
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup mini chocolate chips

Directions:
Preheat oven to 325 degrees. Beat egg white until thick. Add granulated sugar to egg white and continue to beat until forms soft peaks.
While beating add brown sugar, corn syrup, shortening, and egg substitute. In separate bowl, combine flour, salt, baking soda, and baking powder. Combine dry with wet and mix well. Add choclate chips and incorporate well into dough.
Divide dough in half, roll each portion into a long, thin log about the diameter of a nickel and wrap each in plastic wrap. Put the dough into the refrigerator and chill for a couple of hours (may use freezer for roughly half the time if in hurry).
When dough is chilled, remove each log from plastic wrap and cut into 1/4 inch thick slices. Place slices on cookie sheet coated lightly with nonstick spray about 1/2 inch apart, bake for 10-12 minutes or until cookies turn light brown.
