Skillet Apricot Chicken
2 tb Flour
1/2 ts Salt
3/4 ts Garlic powder
1/4 ts Ginger
3 lb Chicken; cut in serving .. pieces
1 tb Vegetable oil
3/4 c Orange juice
1/4 c Honey
2 Chicken bouillon cubes; .. crumbled
1/2 ts Rosemary
3" stick cinnamon
1/2 c Dried apricots
1/2 c Sliced scallions
Mix flour, salt, garlic powder and ginger. Roll chicken pieces in flour mixture.
Heat oil in large frying pan and brown chicken on all sides. Combine orange
juice, honey, bouillon and rosemary. Pour over chicken. Add cinnamon stick,
apricots and scallions; bring to a boil. Reduce heat, cover and simmer 25
minutes. Uncover and cook over medium heat 3-5 minutes, spooning sauce over
frequently until chicken is glazed. Transfer to serving dish and serve hot.
