Shaker Spoon Bread
3 c. milk
3 eggs
1 3/4 tsp. baking powder
1 1/4 c. corn meal
2 tbsp. butter
1 tsp. salt
Stir meal into rapidly boiling milk. Cool until very thick, stirring constantly
to prevent scorching. Remove from heat and allow to cool. The mixture will be
cold and stiff. Add well-beaten egg, salt, baking powder and melted butter. Beat
with electric beater for 15 minutes. Break the hardened cooked meal into the
beaten eggs in small amounts until all is well mixed. Pour into two well-greased
casseroles. Bake at 375 degrees for 30 minutes.
