Red Pepper Pasta
1 teaspoon Olive oil
2 medium Red bell peppers; diced -- about 3 cups
1 medium Garlic clove -- crushed
1/2 cup Tomato puree
1/4 pound Fusilli pasta
Salt
Black pepper
Place a lg. saucepan of water on to boil. Heat oil in a skillet over med. heat
and sauté bell pepper and garlic for about 10 mins., stirring occasionally. Add
pasta to boiling water and cook about 10 mins. Meanwhile, spoon tomato puree and
sautéed vegetables into a food processor or blender and process until smooth.
Add salt and pepper to taste. Drain pasta and toss with sauce.
