Potato & Tomato Casserole
Ingredients :
4-6 large potatoes, sliced 1/2-inch thick
3-4 large tomatoes, sliced
2 med. onion, thinly sliced
1/4 cup Romano/Parmesan cheese
1/2 cup Provolone, Fontina or Mozzarella cheese, shredded
olive oil
oregano, salt/pepper to taste

Instructions :
1) Pour a thin coating of olive oil in the bottom of a casserole dish. Arrange vegetables in layers, sprinkling each layer with cheese, oregano, salt and pepper. Dot top with olive oil.
2) Bake at 400 for 40 minutes (covered), 10 minutes (uncovered).
NOTE - This casserole can be baked the day before and reheated before serving.
