Orange Beets
1 can (1 pound) sliced beets, drained
1 tablespoon cornstarch
1 tablespoon brown sugar
1 teaspoon finely shredded orange peel
3/4 teaspoon salt
Dash pepper
3/4 cup orange juice
1 tablespoon vinegar
In small saucepan, stir together cornstarch, brown sugar, orange peel, salt and
pepper. Stir in orange juice and vinegar. Cook, stirring constantly, until
mixture thickens and boils. Boil and stir 1 minute. Stir in beets; heat through.
