Mrs Fields Oatmeal Raisin Chews Recipe
Serves/Makes: 48
Ingredients:
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 cup quick-cooking oats
1 cup dark brown sugar -- packed
1/2 cup sugar
1 cup butter -- softened
2 tablespoons honey
2 teaspoons vanilla extract
2 large eggs
1 1/2 cup raisins
1/2 cup walnuts -- chopped
Directions:
Preheat oven to 300F. In a medium bowl, combine flour, soda, salt, and oats. Mix
well and set aside. In a large bowl, blend sugars with electric mixer set at
medium speed. Add butter and mix to form a grainy paste. Scrape down sides of
bowl, then add honey, vanilla, and eggs. Mix at medium speed until light and
fluffy. Add the flour mixture, raisins, and walnuts; blend at low speed just
until combined. Drop by rounded tablespoons onto ungreased cookie sheets, 1 1/2"
apart. Bake for 22-24 minutes or until cookies are light golden brown.
Immediately transfer cookies to a cool flat surface.
