Mennonite Oatmeal Cake
1 c. quick rolled oats
1 1/2 c. boiling water
1/2 c. butter or margarine
1 c. brown sugar
1 c. white sugar
2 eggs, beaten
1 1/2 c. flour
1 tsp. soda
1 tsp. cinnamon
TOPPING:
6 tbsp. melted butter or margarine
1/2 c. brown sugar
1/2 c. coconut
1/2 c. chopped nuts (optional)
1/2 tsp. vanilla
Pour boiling water over oats; stir and cool. Cream together butter, brown sugar,
white sugar, eggs. Sift together flour, soda, cinnamon and add to creamed
mixture. Add oats; mix well.
