Mahi Mahi Hush Puppies
*Note: I've not tried these. I had Mahi Mahi twice in
Hawaii, once on the plane coming over. It was tender and delicious. I had it at
a restaurant later. It was tough and tasteless. At the time of my going to
Hawaii, I'd never eaten this fish before or tilapia. Thinking back on the
experience, I will always wonder if that was real Mahi Mahi on the plane or
tilapia, because now that I've eaten tilapia, it tasted a lot like the fish on
the plane.
INGREDIENTS
Fresh Mahi (Dolphin) Fillet
1 Tbsp Maryland Crab Seasoning (optional)
Package of dry Hush Puppy mix
Toothpicks
Directions
Heat your favorite vegetable oil in a deep fryer.
If you don't have a deep fryer a deep sauce pan works OK.
Trim darker meat from the Mahi filet.
You can substitute other white flaky fish such as catfish if the Mahi is
unavailable.
Prepare hush puppy mix as directed on the package then add 1/2 cup additional
water.
You want the mix to be just a little thicker than pancake batter.
Cut the fish into 1/2" to 3/4" cubes.
Sprinkle lightly with crab seasoning such as Old Bay if desired.
Stick each cube with a toothpick.
Dip into hush puppy mix then drop into the hot oil toothpick and all.
Fry for 3 minutes or until dark brown.
Drain on a paper towel and serve immediatly.
The kids absolutely love these. (grownups too) My two kids can eat them faster
than I can make them. Make only enough to eat within an hour or two, they lose
the crispy outer shell after that.
