Lighthouse Inn Nutty Puppies Recipe
Serves/Makes: 1 dozen
Ingredients:
2 ounces chopped Spanish peanuts
1 (#303) can cream style corn
2 ounces crumbled bacon
2 jalapeno peppers, chopped fine
1 med.onion, chopped
3 cups cornmeal
1 1/2 cup flour
1 3/4 teaspoon salt
1/2 teaspoon black pepper
1 1/3 cup buttermilk
1/2 cup water
1/3 pound melted butter
3 eggs
Deep fat for frying
Directions:
Combine ingredients well, roll into one-oz. rolls. Fry in 450* deep fat until
golden brown. Serve piping hot with seafood dishes.
