La Cucina Mussels Marinara Recipe
Serves/Makes: 1
Ingredients:
15 mussels in the shell
1 tablespoon olive oil
2 cloves garlic, minced
1 cherry pepper
2 Kalamata olives
1/2 cup dry white wine
1/4 cup marinara sauce (meatless spaghetti sauce)
Salt, pepper

Directions:
Scrub mussels with a stiff brush and pull or cut away the wiry beards, if any, that protrude from the shells. Discard any mussels that do not close when tapped.
Heat oil in a kettle or large saucepan. Saute garlic until golden brown. Add mussels, cherry pepper and olives. Add wine and marinara sauce.
Cover and simmer for 8 to 10 minutes, or until mussels open. Season broth to taste with salt and pepper. Serve mussels in a bowl with the broth.
