Impossible Zucchini Pie
1 cup Bisquick
4 eggs
1 garlic clove, chopped
1/2 cup grated sharp cheese
1/2 cup vegetable oil
3 cups cubed zucchini
1 large onion, chopped
1/2 cup green bell pepper, chopped
Blend together Bisquick, eggs, garlic, cheese and oil. Place zucchini, onion and
green pepper in a 9-inch pie pan. Pour Bisquick mixture on top. Bake at 350
degrees F for about 45 minutes or until golden brown.
