Glazed Grilled Salmon
3 Tbsp. packed dark brown sugar
4 tsp. prepared Chinese-style mustard - or Dijon
1 Tbsp. soy sauce
1 tsp. rice vinegar
6-7 (8oz.) 3/4" thick or more salmon steaks

Prepare grill for medium-high heat. Combine sugar, mustard, and soy sauce in medium bowl; whisk to blend. Transfer 1 Tbsp. of glaze to a small bowl, add rice vinegar; set aside. Brush one side of salmon w/ ½ glaze. Place salmon, glazed side down, onto grill. Grill until slightly charred, about 4 minutes. Brush top of salmon with remaining glaze, place glaze side down and grill until slightly charred (about 5 minutes).
Drizzle reserved glaze over salmon and save.
