Easy Potato-coated Oven-fried Chicken
Ingredients:
1 whole cutup chicken or boneless, skinless chicken breasts
seasoned salt
white pepper
garlic powder
2-3 egg whites or equivalent egg substitute, slightly beaten or until frothy
1 1/2 cups dry mashed potato flakes
1/2 cup butter or margarine
Instructions: Heat oven to 350 degrees. Sprinkle chicken liberally with seasoned
salt, pepper and a little garlic powder, then rub in. Dip each piece into beaten
egg whites, then coat with mashed potato flakes. Melt butter or margarine in
shallow baking pan; arrange chicken pieces in single layer. Bake in preheated
oven for 30 minutes. Turn pieces and continue baking another 45 minutes, or
until pieces are tender.
