Diabetic Fruit Cookies
A moist and chewy cookie for Diabetics
Yield: 3 dozen cookies
Ingredients
1 c. flour
1 tsp. baking soda
1 c. water
1 c. dates, chopped
1/2 c. apples, peeled & chopped
3/4 c. raisins
1/2 c. margarine
1 c. quick oats
2 eggs, beaten (or eggbeaters)
1 tsp. vanilla
1 c. pecans, chopped

Instructions
1. Sift flour and soda, set aside
2. Cook water, dates, apple and raisins;bring to a boil. Simmer 3 minutes
3. Remove from heat and add the margarine and stir
4. Cool mixture and then add eggs, oatmeal and the dry ingredients; add the vanilla and nuts
5. Cover and refrigerate overnight
6. Drop on cookie sheets 2 inches apart. Bake in 350 degree oven for about 24 minutes
7. Store in the refrigerator in airtight container
8. May also add 1 tsp. cinnamon to dry ingredients if desired.
* I'm not sure about the egg beaters, if they have added sweetener to them. I don't see why but you probably don't buy any thing without reading the labels anyway and real eggs don't have sugar
