Cucumber Sunemona

2 large cucumbers, peeled, halved, seeded and sliced thin
2 slices ginger, chopped fine
1/3 C. white vinegar
4 tsps. sugar (or if diabetic, 2 pkgs. atificial sweetener)

Mix last 3 ingredients well. Pour over cukes and marinate overnight. This is easiest made with a food processor, I mix the ginger, vinegar and sugar with the metal chopping blade. Then I change the blade to the thin slicing blade and process the cukes. Turn into a bowl and cover and chill. Enjoy!!!!!!
Arame
is Saute finely sliced onions carrots and ginger in water or water/wine combo. When almost done, place arame on top and let it steam till soft. Mix and add soy, tamari or vinegar. You could eat this with brown rice, tofu, or after cooling chop it and add soy mayo+lemon juice and scoop it with rice crackers.
