Crispy Potato, Chicken & Cheddar Bake
4 boneless, skinless chicken breasts
salt and pepper to taste
1 package (10 ounces) frozen chopped broccoli, thawed
1 package (8 ounces) shredded cheddar cheese
1/2 package (26 ounces) frozen batter-dipped unpeeled potato slices

Instructions: Preheat oven to 425F. Spray 13x9 inch baking dish with nonstick cooking spray. Place chicken crosswise in baking dish; sprinkle with salt and pepper. Spread broccoli and 1 1/2 cups cheese over chicken. Place potatoes in slightly overlapping rows on top. Bake 30 minutes. Sprinkle with remaining cheese. Bake 5 minutes longer or until chicken is done and cheese has melted.
