Cranberry Cappuccino Muffins
INGREDIENTS:
1 3/4 cups flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons cocoa
1 tablespoon instant coffee
1/2 teaspoon cinnamon
3/4 teaspoon salt
3/4 cup milk
1 egg
6 tablespoons oil
1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries

DIRECTIONS:
Preheat oven to 375ºF. Grease a 12-cup muffin tin.
Combine dry ingredients in a medium mixing bowl. Combine liquid ingredients in a separate mixing bowl. Add liquid ingredients to dry, mixing just until dry ingredients are moist. Stir in cranberries.
Fill each muffin cup 2/3 of the way full with batter. Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Makes 1 dozen.
