Chicken Sorrento
3 lb Chicken pieces Flour seasoned with salt .. and pepper
3 tb Vegetable oil
1/3 c Rice
1 lg Onion
1 Orange; seeded and halved, .. with peel
1/2 c Milk
1 c Water
3 tb Chopped pimento
1/4 ts Thyme
1/8 ts Sugar
1/8 ts Cayenne
Coat chicken pieces with seasoned flour. Heat oil in frying pan and brown
chicken on all sides. Remove chicken from pan and set aside. Add rice to pan,
stirring over low heat until rice is golden.
Preheat oven to 350°.
Put onion and unpeeled orange through a food grinder, using the coarse blade.
Mix rice with onion and orange mixture, then place in casserole dish. Arrange
chicken pieces on top. Add remaining ingredients. Cover and bake 1-1/4 hours.
Adjust seasoning before serving.
