Buffalo Wings
Ingredients:
1 C. flour
1 tsp. salt
½ tsp. cayenne pepper
½ tsp. paprika
20 chicken wings and/or drumlets
½ C. butter*
¼ tsp. black pepper
½ C. hot sauce
¼ tsp. garlic powder

Instructions:
-Combine flour, salt, cayenne pepper, and paprika in bowl.
-Coat chicken pieces in dry mixture.
-Refrigerate chicken for at least 1 hour.
-Melt butter in small sauce pan.
-Stir in pepper, hot sauce, and garlic powder. Keep warm.
-Deep fry chicken, 10 pieces at a time in 375º oil for 13 minutes.
-Drain on paper towels for 20 seconds.
-Immediately place chicken in Tupperware bowl.
-Pour half the hot sauce mixture over chicken (first 10 pieces). Cover and toss to coat. Repeat with second batch of chicken.
-Serve with ranch or blue cheese dressing as dip.
-Wings can be frozen and reheated in 400º for 10 minutes.
# Can be substituted with reduced fat butter.
