Blueberry Pancakes
2 c unbleached flour
1/2 c granulated sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1 c blueberries
2 c skim milk -- at room temperature
2 egg whites -- whipped
1 tbs. applesauce -- at room temperature
Prepare skillet with cooking spray and heat on medium until hot. In a mixing
bowl, combine flour, sugar, baking powder, salt, nutmeg, and blueberries. In
another mixing bowl, combine milk, egg whites, and applesauce. Mix dry
ingredients with wet ingredients just until moistened. Ladle in the batter,
using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully
and cook for 2 minutes more. Repeat with remaining batter.
